Would a Wynaut with Eviolite be more effective than a regular Wobbufett?

No. Counter and Mirror Coat’s damage is directly based off of how much damage you take; the best way to use them would be a Pokémon with high HP and low defenses, so that you can take as much damage as possible without KOing it, which is exactly what Wobbuffet is. Eviolite Wynaut has only decent HP and good defenses, making it a worse Counter/MC option. In fact, even if it could use different moves, Wobbuffet would still be able to tank more hits than Eviolite Wynaut because of the massive increase in HP.
You should use Focus Sash or Leftovers, instead. Sure, you will tank more hits but you can get set up on. Focus Sash can retaliate.
