Is it possible for a Pokemon to fulfill more than one role in a moveset? For example, a Pokemon that has the roles of both a bulky attacker/p-hazer?

Yes. Take for instance this Pelipper set. All credit goes to Y, as she made it:

Pelipper (M) @ Damp RockAbility: DrizzleEVs: 248 HP / 232 Def / 28 SpABold Nature- Scald- Defog- U-turn- Hurricane

It’s a hazard remover, rain setter, and pivoter with U-turn all at once.

There are of course other examples, but this shows that a Pokemon can have the potential to fulfill multiple roles on a team.

Yes, it’s possible, for example:

Hippowdon @ LeftoversAbility: Sand StreamEVs: 252 Atk / 252 Def / 4 SpDImpish Nature- Earthquake- Stealth Rock- Whirlwind- Slack Off

Hippowdon works as a hazard setter, staller, and with a pretty good attack stat, it can deal good damage with its STAB Earthquake.
